Ideally, cook bacon ahead.  All other elements can come together in 20 minutes. There are a million tweaks to the egg mix.  Substitute sausage links for the bacon, other favorite veggies, and various kinds of cheese.  The attached picture shows Sriracha sauce drizzled in the shape of a heart to dip individual pieces of the Egg/pastry for those who like a little more heat.  This is also an easy dish at any time to feed the masses.  One roll of pastry can serve 6, and most boxes include 2 rolls. Easy to expand.  Enjoy!



  • 1 Roll of Puff Pastry

  • 1/2 Cup Diced Red Pepper

  • 1/2 Cup Diced Onion

  • Feta Cheese

  • 1 ½ cups of chopped Baby Spinach

  • 4 Eggs

  • 2 Tbsp water

  • Salt & Pepper

  • Butter for skillet and to grease sheet pan for pastry

  • 12 strawberries (serves 4)

  • Bunch of parsley as garnish

  • 1 pack bacon


Egg and Pastry:

  • Thaw the puff pastry per directions (easiest in in the fridge overnight).

  • Preheat oven as directed on puffed pastry package.

  • Grease sheet pan with light butter.

  • Roll pastry onto lightly floured cutting board and roll flatter as desired. It will expand.

  • Whisk eggs with water and brush the top of the pastry.

  • Bake per instruction (about 15 minutes at 400 degrees).

  • Pull out of oven and poke puffed pastry with fork and gently push down to flatten.

  • Cut pastry into desire serving sizes.


  • Meanwhile, heat skillet and cook pepper and onion for 5 minutes in pad of butter.

  • Push to side and add rest of egg misture.  Scramble until lightly cooked.

  • Turn off heat and add spinach.  Stir and wilt down.

  • Transfer equal portions to the top of pastry sections.

  • Salt and pepper to taste.

  • Add Feta cheese.

  • Return to oven and turn off oven. Heat through for 5 minutes to warm cheese.


Glorious Bacon:

  • Heat oven to 350 degrees and cook bacon on cooling rack over cookie sheet (flipping optional). 

  • When 2/3 done, sprinkle a pinch of Brown Sugar along each strip and finish cooking.

  • About 40 minutes total or until desired.

  • Can cook Bacon day before to make life easy on Valentine’s morning (just warm in microwave).


Strawberries and Garnish

  • Strawberries can be neatly cut with a knife (long way) or with an egg slicer.  Clip top a bit to shape into heart.  

  • At least 3 strawberries per serving. 

  • Add Parsley or other green to garnish plate.

“Good Morning Valentine’s” Memosa

  • 1 tsp - 1 TBSP of fresh grated Ginger Root

  • Add Dash of Honey

  • Small pan with water

  • Combine above and simmer to reduce.  

  • Add dry Champaign and Raspberries (1 or 2 to drop on top) 

  • Assemble all for an exceptionally refreshing mimosa!


Plate all and serve!

  • 3/4 cup butter (room temp)

  • 1 cup sugar

  • 1/3 tsp Vanilla

  • 1/2 tsp salt

  • 1/2 cup dark rum

  • 2 tbsp instant coffee

  • 3 cups flower

  • 2 tsp baking powder

  • 1 cup toasted almonds (chopped)

  • Confectioner's sugar



  • Heat oven to 375° 

  • Heat rum in sauce pan, then add coffee. Cool rum mixture a bit.

  • Lightly grease baking sheet or use parchment paper

  • Cream butter, sugar, salt vanilla with mixer, about 1 minute.

  • Add rum mixture to batter and mix well.

  • Combine dry ingredients and incorporate. Fold in nuts.

  • Shape into 1 inch balls and press with damp fork (dunk in water)... crisscross style.

  • Bake for 12 - 15 minutes or until lightly brown. Cool then dust with powdered sugar.


  • Absolutely toast the almonds whole until they start to generate that smokey smell.  Flip frequently on a medium-low skillet. Almonds will have brown spots.  Then, chop on cutting board.  Watch... if you take your eye off them, almonds can burn easily, but you can still use!  

  • Always use best ingredients.  Flour (McArthur), highest quality vanilla (bean paste if possible), and organic good quality butter. 

  • These are as great frozen, as they are fresh!
